DIY baked mozzarella and tomatoes

Ingredients (nutrition)

  • 6 beefsteak tomatoes
  • 4 oz grated Mozzarella cheese
  • 6 stoned and sliced black olives
  • 12 basil leaves
  • 1 1/4 tablespoons extra virgin olive oil
  • 1 1/4 tablespoons lemon juice
  • 2 slices whole grain bread, cut into bite size cubes

Preparation (instructions)

  1. Preheat the oven to 400 degree F.
  2. Cut tomatoes in slices. Lay the tomato slices in 6 shallow ovenproof dishes.
  3. Sprinkle cheese, olives and basil leaves over the top.
  4. Drizzle olive oil and lemon juice.
  5. Place bread cubes on a baking tray and the individual dishes in the oven.
  6. Bake approximately for 10 minutes.
  7. Sprinkle the baked bread (croutons) over the cheese tomatoes.
  8. Serve straight away.
