Ingredients (nutrition)
- 6 beefsteak tomatoes
- 4 oz grated Mozzarella cheese
- 6 stoned and sliced black olives
- 12 basil leaves
- 1 1/4 tablespoons extra virgin olive oil
- 1 1/4 tablespoons lemon juice
- 2 slices whole grain bread, cut into bite size cubes
Preparation (instructions)
- Preheat the oven to 400 degree F.
- Cut tomatoes in slices. Lay the tomato slices in 6 shallow ovenproof dishes.
- Sprinkle cheese, olives and basil leaves over the top.
- Drizzle olive oil and lemon juice.
- Place bread cubes on a baking tray and the individual dishes in the oven.
- Bake approximately for 10 minutes.
- Sprinkle the baked bread (croutons) over the cheese tomatoes.
- Serve straight away.
