Ingredients (nutrition)
- 6 russet potatoes
- salt and ground black pepper to taste
- 1/2 cup butter
- 1 cup shredded Cheddar cheese
- 1/4 cup sour cream
Preparation (instructions)
- Clean potatoes using a vegetable brush.
- Place on a baking dish and cook in microwave for 5 minutes on full power.
- Turn over the other side and further cook for another 5 minutes until potatoes are soft and tender.
- Remove from microwave and cut into half lengthways.
- Season well with salt and pepper.
- Mash the potatoes a little and top with butter and 1 tablespoon of cheese.
- Return to microwave and cook for approximately 1 minute.
- Garnish with sour cream and remaining cheese.
- Serve hot.
