homemade Cauliflower fritters (cauliflower tempura)

Ingredients (nutrition)

  • 2 oz chickpea flour
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons ground turmeric
  • 1 1/2 teaspoons ground cumin
  • pinch of cayenne pepper
  • 1/2 teaspoon salt
  • 2 fl oz water
  • 1 egg yolk
  • 1 egg
  • vegetable oil or sunflower oil
  • 1 1/2 lb cauliflower, broken into florets

Preparation (instructions)

  1. Combine flour, coriander, turmeric, cumin, cayenne pepper and salt in a large mixing bowl. Make a well in the centre.
  2. In a separate bowl, whisk water and eggs.
  3. Pour the egg mixture in the well and slowly mix until a smooth batter is form.
  4. Set aside to rest for about 20 minutes.
  5. Fill in a pot of oil for deep frying. Make sure the oil is hot enough before frying.
  6. Dip cauliflower florets into the batter and slowly deep fry for 4 minutes until golden brown.
  7. Remove and drain with kitchen paper towel.
  8. Serve hot.
