Ingredients (nutrition)
- 2 oz chickpea flour
- 1 1/2 teaspoons ground coriander
- 1 1/2 teaspoons ground turmeric
- 1 1/2 teaspoons ground cumin
- pinch of cayenne pepper
- 1/2 teaspoon salt
- 2 fl oz water
- 1 egg yolk
- 1 egg
- vegetable oil or sunflower oil
- 1 1/2 lb cauliflower, broken into florets
Preparation (instructions)
- Combine flour, coriander, turmeric, cumin, cayenne pepper and salt in a large mixing bowl. Make a well in the centre.
- In a separate bowl, whisk water and eggs.
- Pour the egg mixture in the well and slowly mix until a smooth batter is form.
- Set aside to rest for about 20 minutes.
- Fill in a pot of oil for deep frying. Make sure the oil is hot enough before frying.
- Dip cauliflower florets into the batter and slowly deep fry for 4 minutes until golden brown.
- Remove and drain with kitchen paper towel.
- Serve hot.
