Ingredients (nutrition)
- 4 oz self raising flour
- 2 beaten large eggs
- 2 fl oz milk
- 10 oz grated courgettes
- 2 1/2 tablespoons chopped thyme leaves
- salt and ground black pepper to taste
- 3 teaspoons vegetable oil
Preparation (instructions)
- Add flour into a mixing bowl and make a well in the centre.
- Add beaten eggs to the well and slowly draw in the flour from the sides.
- Put in milk to the mixture and stir to form a thick batter.
- Mix in courgettes, thyme, salt and pepper.
- Heat up oil in a frying pan until hot.
- Cautiously drop in tablespoons of the batter to deep fry for approximately 3 minutes or until golden brown.
- Remove the fritters and drain with kitchen paper towel.
- Serve immediately.
