How to cook: Courgette fritters (courgette tempura)

Ingredients (nutrition)

  • 4 oz self raising flour
  • 2 beaten large eggs
  • 2 fl oz milk
  • 10 oz grated courgettes
  • 2 1/2 tablespoons chopped thyme leaves
  • salt and ground black pepper to taste
  • 3 teaspoons vegetable oil

Preparation (instructions)

  1. Add flour into a mixing bowl and make a well in the centre.
  2. Add beaten eggs to the well and slowly draw in the flour from the sides.
  3. Put in milk to the mixture and stir to form a thick batter.
  4. Mix in courgettes, thyme, salt and pepper.
  5. Heat up oil in a frying pan until hot.
  6. Cautiously drop in tablespoons of the batter to deep fry for approximately 3 minutes or until golden brown.
  7. Remove the fritters and drain with kitchen paper towel.
  8. Serve immediately.
