Ingredients (nutrition)
- 15 leeks
- 15 asparagus
- 2 tablespoons olive oil
- 3 oz grated Pecorino cheese
- 3 tablespoons lemon juice
Preparation (instructions)
- Preheat grill.
- Trim and remove the ends of leeks.
- Layer leeks and asparagus in a baking dish.
- Brush them with olive oil.
- Place under the grill.
- Cook for 7 minutes, rotate the vegetables frequently for even grill.
- If required, brush more olive oil.
- When nearly done, shake over grated cheese and lemon juice.
- Grill for about 1 minute and serve hot.
