Simple Grilled leeks and asparagus

Grilled leeks and asparagus Fritata

Ingredients (nutrition)

  • 15 leeks
  • 15 asparagus
  • 2 tablespoons olive oil
  • 3 oz grated Pecorino cheese
  • 3 tablespoons lemon juice

Preparation (instructions)

  1. Preheat grill.
  2. Trim and remove the ends of leeks.
  3. Layer leeks and asparagus in a baking dish.
  4. Brush them with olive oil.
  5. Place under the grill.
  6. Cook for 7 minutes, rotate the vegetables frequently for even grill.
  7. If required, brush more olive oil.
  8. When nearly done, shake over grated cheese and lemon juice.
  9. Grill for about 1 minute and serve hot.
