Do it yourself: Lobster rolls sandwich

Grilled Lobster Rolls

Ingredients (nutrition)

  • 1 lb lobster meat
  • 2 celery sticks
  • 8 fl oz lemon mayonnaise
  • 1 1/4 tablespoons chopped tarragon
  • 5 small Pitta breads
  • 2 tablespoons extra virgin olive oil

Preparation (instructions)

  1. Cut the lobster flesh and celery in chunks and mix them together in a large mixing bowl.
  2. Fold in 3/4 of lemon mayonnaise and tarragon.
  3. Warm Pitta breads under grill and spread the extra mayonnaise.
  4. Fill the lobster mixture into the bread.
  5. Drizzle some extra virgin olive oil and serve immediately.
