- 1 lb lobster meat
- 2 celery sticks
- 8 fl oz lemon mayonnaise
- 1 1/4 tablespoons chopped tarragon
- 5 small Pitta breads
- 2 tablespoons extra virgin olive oil
Preparation (instructions)
- Cut the lobster flesh and celery in chunks and mix them together in a large mixing bowl.
- Fold in 3/4 of lemon mayonnaise and tarragon.
- Warm Pitta breads under grill and spread the extra mayonnaise.
- Fill the lobster mixture into the bread.
- Drizzle some extra virgin olive oil and serve immediately.
