Ingredients (nutrition)
- 12 fresh mussels
- 2 finely chopped medium tomatoes
- 3 finely chopped garlic cloves
- 1/2 cup chopped fresh parsley
- 1/4 cup white wine
- 1 1/2 tablespoons lemon juice
- 1 1/2 tablespoons olive oil
Preparation (instructions)
- Clean and debeard mussels.
- Place them in a saucepan of boiling water until the mussels open.
- Remove the mussels from the shell and reserve half the shell each for serving later.
- To make vinaigrette, whisk in remaining ingredients in a glass bowl.
- Add in the mussel flesh and marinate about 2 hours at room temperature.
- Scoop the mussel mixture onto the shells and arrange nicely on a large serving platter.
