Simple marinated mussels appetizer

Olive oil marinated mussels

Ingredients (nutrition)

  • 12 fresh mussels
  • 2 finely chopped medium tomatoes
  • 3 finely chopped garlic cloves
  • 1/2 cup chopped fresh parsley
  • 1/4 cup white wine
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons olive oil

Preparation (instructions)

  1. Clean and debeard mussels.
  2. Place them in a saucepan of boiling water until the mussels open.
  3. Remove the mussels from the shell and reserve half the shell each for serving later.
  4. To make vinaigrette, whisk in remaining ingredients in a glass bowl.
  5. Add in the mussel flesh and marinate about 2 hours at room temperature.
  6. Scoop the mussel mixture onto the shells and arrange nicely on a large serving platter.
