Ingredients (nutrition)
- 1 large cantaloupe melon
- 6 fl oz sparkling wine
- 3 1/2 tablespoons orange marmalade
- 1/2 bunch finely chopped mint leaves
Preparation (instructions)
- Cut melon into half and remove the seeds.
- Remove the flesh and cut into bite size chunks.
- Place cubes in a bowl.
- Do not discard the melon shell.
- In a separate bowl, whisk together wine, orange marmalade and mint.
- Pour the mixture over the melon flesh and mix thoroughly.
- Place mixture in the reserved melon shell.
- Cover with cling film and chill in the refrigerator for at least 5 hours before serving.
- Serve cold.
