Homemade Mushroom Quiches

Spinach Mushroom Quiches

Ingredients (nutrition)

  • 4 slices brown bread without crust
  • 2 teaspoons margarine
  • 1 minced garlic clove
  • 8 oz finely chopped mushrooms
  • salt and ground black pepper to taste
  • 3 large beaten eggs
  • 4 oz grated Emmental cheese

Preparation (instructions)

  1. Preheat oven to 375 degree F.
  2. Roll flat each slice of bread using a rolling pin.
  3. Halve each slice and place in a greased muffin tray, pressing each slice into the mould.
  4. Bake the bread cups in the oven while still warm, at low heat until dry and crisp.
  5. Remove from oven and allow to rest.
  6. Melt margarine in a frying pan over a medium heat.
  7. Saute garlic and mushrooms for 4 minutes.
  8. Season well with salt and pepper.
  9. Pour eggs over the bread cups, dividing the mixture equally.
  10. Add the mushroom mixture and top with cheese.
  11. Bake in the oven for 17 minutes.
  12. Serve hot.
