Ingredients (nutrition)
- 3 1/2 tablespoons mayonnaise
- 3 1/2 tablespoons single cream
- 1 1/2 teaspoons lemon juice
- 1 1/2 teaspoons tomato puree
- dash of dry sherry
- dash of Worcestershire sauce
- salt and ground black pepper to taste
- 8 oz peeled and deveined cooked prawns
- 6 shredded lettuce leaves
- 6 lemon slices
Preparation (instructions)
- In a medium bowl, mix together mayonnaise, single cream, lemon juice, tomato puree, dry sherry, Worcestershire sauce, salt and ground black pepper.
- Add cooked prawns in and stir well.
- Place shredded lettuce in 3 cocktail glasses.
- Scoop prawn mixture and place it on top of the lettuce.
- Garnish each prawn cocktail with 2 lemon slices.
- Chill in the refrigerator for at least 1 hour before serving.
