- 5 fl oz olive oil
- 1 finely chopped large onion
- 1 1/2 teaspoons ground cumin
- 1 lb chopped spinach
- 2 crushed garlic cloves
- 4 oz crumbled Feta cheese
- 4 oz cream cheese
- 13 oz filo pastry
Preparation (instructions)
- Preheat oven to 375 degree F.
- Heat some olive oil in a frying pan.
- Add in onions and sweat gently for about 8 minutes until softened.
- Add in cumin and stir for 3 minutes.
- Stir in spinach and garlic.
- Remove pan from the heat and add in cheese. Mix thoroughly.
- Brush some olive oil on a rectangular baking dish.
- Put a sheet of pastry in the baking dish, let the edges hang over the side.
- Brush the pastry in the dish with oil.
- Repeat until half the pastry is used.
- Spread the cheese and spinach mixture over the pastry.
- Use the remaining pastry to top up the mixture and continue to brush olive oil over individual pastry sheets.
- Trim and seal the edges.
- Cut through the layers with a sharp knife to divide the pie into segments.
- Bake in the oven for 25-30 minutes.
- Leave to cool for 15 minutes before serving.
