How to make your own Spanakopita Spinach and cheese pie

Ingredients (nutrition)

  • 5 fl oz olive oil
  • 1 finely chopped large onion
  • 1 1/2 teaspoons ground cumin
  • 1 lb chopped spinach
  • 2 crushed garlic cloves
  • 4 oz crumbled Feta cheese
  • 4 oz cream cheese
  • 13 oz filo pastry

Preparation (instructions)

  1. Preheat oven to 375 degree F.
  2. Heat some olive oil in a frying pan.
  3. Add in onions and sweat gently for about 8 minutes until softened.
  4. Add in cumin and stir for 3 minutes.
  5. Stir in spinach and garlic.
  6. Remove pan from the heat and add in cheese. Mix thoroughly.
  7. Brush some olive oil on a rectangular baking dish.
  8. Put a sheet of pastry in the baking dish, let the edges hang over the side.
  9. Brush the pastry in the dish with oil.
  10. Repeat until half the pastry is used.
  11. Spread the cheese and spinach mixture over the pastry.
  12. Use the remaining pastry to top up the mixture and continue to brush olive oil over individual pastry sheets.
  13. Trim and seal the edges.
  14. Cut through the layers with a sharp knife to divide the pie into segments.
  15. Bake in the oven for 25-30 minutes.
  16. Leave to cool for 15 minutes before serving.
