Homemade Stuffed celery

Ingredients (nutrition)

  • 7 oz low fat cottage cheese
  • 2 oz seeded and chopped red pepper
  • 2 oz chopped chives
  • 1 crushed garlic clove
  • 1 teaspoon prepared mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon light soy sauce
  • 6 celery sticks without leaves

Preparation (instructions)

  1. Puree all ingredients except celery in a blender or food processor to form a smooth paste.
  2. Stuff celery sticks with the cheese mixture.
  3. Chill for at least 1 hour before serving.
