- 4 medium ripe tomatoes
- 8 large mushrooms with stalks
- 1/2 grated large onion
- 1 tablespoon chopped parsley
- 1 oz butter
- salt and ground black pepper to taste
Preparation (instructions)
- Preheat oven to 375 degree F.
- Place tomatoes in a bowl of hot water for 25 seconds.
- Remove and discard the tomato skins and chop the flesh.
- Remove the mushroom stalks. Chop the stalks and combine together with the tomatoes, onion, parsley, butter and season well with salt and pepper to taste.
- Place the mushrooms cap on a large greased dish baking.
- Load each one with the tomato and mushroom stalk mixture.
- Cover with foil and bake in oven for about 25 minutes.
- Serve hot.
