How to make simple and tasty Stuffed mushrooms

Ingredients (nutrition)

  • 4 medium ripe tomatoes
  • 8 large mushrooms with stalks
  • 1/2 grated large onion
  • 1 tablespoon chopped parsley
  • 1 oz butter
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Preheat oven to 375 degree F.
  2. Place tomatoes in a bowl of hot water for 25 seconds.
  3. Remove and discard the tomato skins and chop the flesh.
  4. Remove the mushroom stalks. Chop the stalks and combine together with the tomatoes, onion, parsley, butter and season well with salt and pepper to taste.
  5. Place the mushrooms cap on a large greased dish baking.
  6. Load each one with the tomato and mushroom stalk mixture.
  7. Cover with foil and bake in oven for about 25 minutes.
  8. Serve hot.
