Ingredients (nutrition)
- 2 green or red peppers
- 3 oz grated Cheddar cheese
- 1 hard boiled and finely chopped large egg
- 3 finely chopped medium tomatoes
- 3 tablespoons mayonnaise
- 2 slices of brown bread
Preparation (instructions)
- Simmer peppers in a large saucepan of water for about 25 minutes or until soft and tender.
- Drain the peppers using a kitchen paper towel and set aside to cool.
- Halve and deseed the peppers.
- Preheat grill until hot.
- In a small mixing bowl, combine grated cheese, eggs and tomatoes.
- Add mayonnaise and stir.
- Fill the pepper halves with the cheese mixture and place on the slices of brown bread.
- Cook under the hot grill until slightly lightly browned.
- Serve warm.
