Homemade easy Cheese Stuffed peppers

Ingredients (nutrition)

  • 2 green or red peppers
  • 3 oz grated Cheddar cheese
  • 1 hard boiled and finely chopped large egg
  • 3 finely chopped medium tomatoes
  • 3 tablespoons mayonnaise
  • 2 slices of brown bread

Preparation (instructions)

  1. Simmer peppers in a large saucepan of water for about 25 minutes or until soft and tender.
  2. Drain the peppers using a kitchen paper towel and set aside to cool.
  3. Halve and deseed the peppers.
  4. Preheat grill until hot.
  5. In a small mixing bowl, combine grated cheese, eggs and tomatoes.
  6. Add mayonnaise and stir.
  7. Fill the pepper halves with the cheese mixture and place on the slices of brown bread.
  8. Cook under the hot grill until slightly lightly browned.
  9. Serve warm.
