Barbecue chicken breasts with blueberry sauce recipe

Ingredients (nutrition)

  • 2 tablespoons rice vinegar
  • 1/4 cup sugar
  • 1/2 cup finely chopped onion
  • 1 tablespoon minced ginger
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon ground allspice
  • 3 tablespoons tomato ketchup
  • 1 1/2 cups blueberries
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 lb boneless chicken breasts
  • 1 tablespoon sunflower oil

Preparation (instructions)

  1. Mix all ingredients except salt, ground black pepper, chicken and oil in a saucepan.
  2. Cook under medium heat for 12 minutes until sauce thickens. Set aside in a warm place.
  3. Rub salt and pepper over chicken.
  4. Heat oil in a large skillet and brown chicken for 8-10 minutes.
  5. Pour sauce into the skillet and coat the chicken well.
  6. Serve hot.
