Barbecue pork chops with apple rum glaze recipe

Ingredients (nutrition)

  • 1 cup apple juice
  • 3/4 cup soy sauce
  • 1/2 cup honey
  • 2 1/2 minced garlic cloves
  • 2 tablespoons grated peeled fresh gingerroot
  • 1 tablespoons dry mustard
  • 2 dash Worcestershire sauce
  • 1/2 cup dark rum
  • 8 pork chops
  • 12 oz jar apple jelly
  • 3 tablespoons lemon juice
  • 1 tablespoon grated nutmeg

Preparation (instructions)

  1. To make the marinade, combine apple juice, 1/2 cup soy sauce, honey, garlic, ginger root, mustard, Worcestershire sauce and rum in a bowl.
  2. In a shallow dish, place pork chops in layer and pour in marinade.
  3. Cover with cling film and chill in refrigerator overnight.
  4. To make the sauce, drain marinate into saucepan, stir in apple jelly, remaining soy sauce and bring to boil until sauce reduced to 1 1/2 cups.
  5. Stir in lemon juice and nutmeg.
  6. Grill pork chops using a barbecue grill until cooked through and serve with prepared sauce.
