Ingredients (nutrition)
- 2 teaspoons sunflower oil
- 1 lb 2 oz lean pork fillet, cut into 1/2 inch thick slices
- 5 fl oz vegetable stock
- 5 fl oz dry rose wine
- 1 tablespoon chopped thyme
- 1 1/2 tablespoon honey
- 2 sliced green apples and tossed in 1 1/2 tablespoon freshly squeezed lemon juice
- 7 oz fresh blackberries
- salt and ground black pepper to taste
- 2 teaspoons cornflour
- 2 tablespoons lemon juice
Preparation (instructions)
- In a non stick frying pan, heat up sunflower oil.
- When the oil is hot, saute pork slices for about 5 minutes.
- Remove pork and drain on kitchen paper towel. Set aside.
- Reserve pan juices in the pan.
- Pour in vegetable stock, wine, thyme and honey.
- Stir and bring to simmer.
- Add in pork and apples.
- Continue to simmer for approximately 5 minutes.
- Add blackberries, salt and pepper.
- Simmer for another 5 minutes.
- Mix cornflour with lemon juice and add to the pan.
- Continue to stir until the sauce thickens.
- Serve immediately.
