Apple pork recipe

Ingredients (nutrition)

  • 2 teaspoons sunflower oil
  • 1 lb 2 oz lean pork fillet, cut into 1/2 inch thick slices
  • 5 fl oz vegetable stock
  • 5 fl oz dry rose wine
  • 1 tablespoon chopped thyme
  • 1 1/2 tablespoon honey
  • 2 sliced green apples and tossed in 1 1/2 tablespoon freshly squeezed lemon juice
  • 7 oz fresh blackberries
  • salt and ground black pepper to taste
  • 2 teaspoons cornflour
  • 2 tablespoons lemon juice

Preparation (instructions)

  1. In a non stick frying pan, heat up sunflower oil.
  2. When the oil is hot, saute pork slices for about 5 minutes.
  3. Remove pork and drain on kitchen paper towel. Set aside.
  4. Reserve pan juices in the pan.
  5. Pour in vegetable stock, wine, thyme and honey.
  6. Stir and bring to simmer.
  7. Add in pork and apples.
  8. Continue to simmer for approximately 5 minutes.
  9. Add blackberries, salt and pepper.
  10. Simmer for another 5 minutes.
  11. Mix cornflour with lemon juice and add to the pan.
  12. Continue to stir until the sauce thickens.
  13. Serve immediately.
