Ingredients (nutrition)
- 4 aubergines
- 7 oz peeled and deveined prawns
- 5 1/2 oz minced pork
- 1 tablespoon sunflower oil
- 3 chopped shallots
- 4 crushed garlic cloves
- 2 tablespoons rinsed cooked soya beans
- 1 tablespoon Thai fish sauce
- 1 tablespoon malt vinegar
- 1/2 teaspoon sugar
- salt and ground black pepper to taste
Preparation (instructions)
- Preheat oven to 450 degree F.
- Cook whole aubergines in oven or until the skins are burnt.
- Place aubergines into a bowl of cold water, peel and cut the flesh into large pieces.
- Place the pieces in a serving dish and set aside.
- In a separate bowl, combine prawns and pork together.
- Season well with salt and pepper and set aside.
- Heat up sunflower oil in a frying pan.
- Saute shallots until browned.
- Remove shallots and drain on kitchen paper towel.
- Saute garlic by using oil remaining in the pan until soft.
- Add prawn and pork mixture and saute for a 3-5 minutes over medium heat.
- Add soya beans, fish sauce, vinegar and sugar.
- Cover and cook for another 2-3 minutes.
- Remove from heat and top the prawn and pork mixture on the prepared aubergines.
- Sprinkle with granulated sugar is desired.
- Serve immediately.
