Aubergine pork & prawns recipe

Ingredients (nutrition)

  • 4 aubergines
  • 7 oz peeled and deveined prawns
  • 5 1/2 oz minced pork
  • 1 tablespoon sunflower oil
  • 3 chopped shallots
  • 4 crushed garlic cloves
  • 2 tablespoons rinsed cooked soya beans
  • 1 tablespoon Thai fish sauce
  • 1 tablespoon malt vinegar
  • 1/2 teaspoon sugar
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Preheat oven to 450 degree F.
  2. Cook whole aubergines in oven or until the skins are burnt.
  3. Place aubergines into a bowl of cold water, peel and cut the flesh into large pieces.
  4. Place the pieces in a serving dish and set aside.
  5. In a separate bowl, combine prawns and pork together.
  6. Season well with salt and pepper and set aside.
  7. Heat up sunflower oil in a frying pan.
  8. Saute shallots until browned.
  9. Remove shallots and drain on kitchen paper towel.
  10. Saute garlic by using oil remaining in the pan until soft.
  11. Add prawn and pork mixture and saute for a 3-5 minutes over medium heat.
  12. Add soya beans, fish sauce, vinegar and sugar.
  13. Cover and cook for another 2-3 minutes.
  14. Remove from heat and top the prawn and pork mixture on the prepared aubergines.
  15. Sprinkle with granulated sugar is desired.
  16. Serve immediately.
