Beef fajitas recipe

Ingredients (nutrition)

  • 1 tablespoon sunflower oil
  • 1 large onion, cut into strips
  • 2 finely minced garlic cloves
  • 1 1/4 tablespoons Mexican chili powder
  • salt and ground black pepper to taste
  • 1 lb minced beef
  • 3 oz ready made salsa
  • 1 thinly sliced courgette
  • 1 chopped red pepper
  • 1 chopped green pepper
  • 4 ready made tortillas

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Heat sunflower oil in a frying pan over medium heat.
  3. Sweat onion, garlic, chili powder, salt and pepper.
  4. Continue to stir until onion is softened.
  5. Add beef and salsa.
  6. Cook until beef is browned.
  7. Add in courgette, red pepper and green pepper.
  8. Cook with regular stirring for about 3-4 minutes.
  9. Wrap tortillas in foil and heat in the oven for 5 minutes.
  10. Place beef mixture in tortillas and roll up.
  11. Serve hot.
