Beef kebabs with roasted red pepper coulis recipe

Ingredients (nutrition)

  • 1 1/2 tablespoons vegetable oil
  • 1 finely chopped medium onion
  • 3 minced cloves garlic
  • 14 oz finely chopped roasted red peppers
  • 1/2 cup dry white wine
  • 2 tablespoons tomato paste
  • 2 teaspoons minced thyme
  • 1 cup ready made beef broth
  • 2 teaspoons cornstarch
  • 1 lb boneless beef top sirloin steak, cut into bite size chunks
  • 3/4 teaspoon sweet paprika
  • salt and ground black pepper to taste

Preparation (instructions)

  1. To make roasted red pepper coulis, heat oil in a non stick pan.
  2. Sweat onion and half of the garlic.
  3. Stir until onion is tender.
  4. Add red peppers, wine, tomato paste and thyme.
  5. Mix broth and cornstarch in a bowl and stir in.
  6. Bring to boil, reduce heat and simmer for 15 minutes.
  7. Set aside in a warm place.
  8. Add beef, remaining garlic, paprika and season with salt and pepper.
  9. Toss and mix well.
  10. Thread beef pieces onto metal skewers, leaving small space between pieces.
  11. Position kebabs on grill.
  12. Grill for 10 minutes, uncovered.
  13. Serve kebabs with prepared roasted red pepper coulis
