Ingredients (nutrition)
- 1 1/2 tablespoons vegetable oil
- 1 finely chopped medium onion
- 3 minced cloves garlic
- 14 oz finely chopped roasted red peppers
- 1/2 cup dry white wine
- 2 tablespoons tomato paste
- 2 teaspoons minced thyme
- 1 cup ready made beef broth
- 2 teaspoons cornstarch
- 1 lb boneless beef top sirloin steak, cut into bite size chunks
- 3/4 teaspoon sweet paprika
- salt and ground black pepper to taste
Preparation (instructions)
- To make roasted red pepper coulis, heat oil in a non stick pan.
- Sweat onion and half of the garlic.
- Stir until onion is tender.
- Add red peppers, wine, tomato paste and thyme.
- Mix broth and cornstarch in a bowl and stir in.
- Bring to boil, reduce heat and simmer for 15 minutes.
- Set aside in a warm place.
- Add beef, remaining garlic, paprika and season with salt and pepper.
- Toss and mix well.
- Thread beef pieces onto metal skewers, leaving small space between pieces.
- Position kebabs on grill.
- Grill for 10 minutes, uncovered.
- Serve kebabs with prepared roasted red pepper coulis
