Ingredients (nutrition)
- 1 1/2 lb ground beef
- 2 teaspoons minced garlic
- 4 cups prepared spaghetti sauce
- 2 cups fresh baby arugula
- 2 cups fresh baby spinach
- 15 oz fat free ricotta cheese
- 2 egg whites
- 2 tablespoons chopped basil
- 2 tablespoons chopped oregano
- 9 uncooked oven ready lasagna noodles
- 1 1/2 cups shredded mozzarella cheese
Preparation (instructions)
- Preheat oven to 375 degree F.
- Add beef and garlic in a non stick skillet under medium heat.
- Brown beef for 10 minutes.
- Drain off drippings and season beef with salt and pepper.
- Stir in pasta sauce and set aside.
- Mix ricotta cheese, egg whites, basil, oregano, salt and pepper in a bowl. Set aside.
- In a bowl, add arugula and spinach. Set aside.
- In a baking dish, scoop some meat sauce and place at the bottom.
- Top with some noodles, ricotta mixture, spinach mixture, and mozzarella cheese.
- Repeat layers until completed.
- Cover with aluminum foil and bake in oven for 55 minutes until noodles are tender and sauce is bubbly.
- Serve hot.
