Ingredients (nutrition)
- 2 fl oz olive oil
- 2 lb baby onions
- 2 lb chuck steak, cut into bite size chunks
- 3 garlic cloves, cut into halves
- 4 fl oz red wine
- 4 cloves
- 1 cinnamon stick
- 1 bay leaf
- 1 tablespoon red wine vinegar
- 2 tablespoons tomato puree
- salt and ground black pepper to taste
- 14 fl oz water
- 2 tablespoons currants
Preparation (instructions)
- Heat olive oil over medium heat in a saucepan.
- Saute onions until golden.
- Remove onions from pan and drain on kitchen paper towel.
- Add meat to the pan and stir over a high heat until meat is browned.
- Add garlic, wine, cloves, cinnamon stick, bay leaf, vinegar, tomato puree, salt and pepper.
- Pour water into the pan and bring to the boil.
- Reduce heat, cover and simmer for 1 hour, stirring occasionally.
- Return cooked onions to the saucepan.
- Add currants and continue to simmer for 15 minutes.
- Remove cinnamon and serve hot.
