Ingredients (nutrition)
- 2 1/2 tablespoons lime juice
- 2 teaspoons minced garlic
- 1 teaspoon chili powder
- 1 lb boneless beef top round steak, cut into strips
- 2 teaspoons sunflower oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 2 cups water
- 1 cup uncooked white rice
- 1 teaspoon ground cumin
- 10 oz diced tomatoes
- 2 chopped green chilies
- 15 oz black beans
- salt and ground black pepper to taste
Preparation (instructions)
- Mix lime juice, 1 teaspoon garlic and chili powder in a bowl.
- Add beef and coat evenly.
- Heat 1 teaspoon oil in a nonstick skillet under medium heat.
- Stir fry beef for 2 minutes and season well with salt and pepper.
- Set beef aside.
- Heat remaining oil in the same skillet until hot.
- Sweat onion, bell pepper and remaining garlic in skillet and stir fry for 3 minutes.
- Add water, rice and cumin. Bring to boil.
- Reduce heat, cover and cook as per rice package instruction.
- Add tomatoes, green chilies and cook until liquid evaporates.
- Return beef and add beans.
- Heat through and season well with salt and pepper.
- Serve hot.
