Beef rice recipe

Ingredients (nutrition)

  • 2 1/2 tablespoons lime juice
  • 2 teaspoons minced garlic
  • 1 teaspoon chili powder
  • 1 lb boneless beef top round steak, cut into strips
  • 2 teaspoons sunflower oil
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 2 cups water
  • 1 cup uncooked white rice
  • 1 teaspoon ground cumin
  • 10 oz diced tomatoes
  • 2 chopped green chilies
  • 15 oz black beans
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Mix lime juice, 1 teaspoon garlic and chili powder in a bowl.
  2. Add beef and coat evenly.
  3. Heat 1 teaspoon oil in a nonstick skillet under medium heat.
  4. Stir fry beef for 2 minutes and season well with salt and pepper.
  5. Set beef aside.
  6. Heat remaining oil in the same skillet until hot.
  7. Sweat onion, bell pepper and remaining garlic in skillet and stir fry for 3 minutes.
  8. Add water, rice and cumin. Bring to boil.
  9. Reduce heat, cover and cook as per rice package instruction.
  10. Add tomatoes, green chilies and cook until liquid evaporates.
  11. Return beef and add beans.
  12. Heat through and season well with salt and pepper.
  13. Serve hot.
