Beef sandwich with caramelized onions recipe

Ingredients (nutrition)

For Balsamic Caramelized Onions

  • 1 teaspoon vegetable oil
  • 3 cups sliced onions
  • 1/4 cup balsamic vinegar
  • 1 teaspoon brown sugar
  • salt and ground black pepper to taste

For Beef Sandwich

  • 1 center cut beef tenderloin roast
  • 2 minced cloves garlic
  • 1 tablespoon chopped thyme
  • 5 sundried tomatoes
  • 1/4 cup low fat dairy sour cream
  • 1 1/2 teaspoons olive oil
  • 4 cups fresh baby spinach
  • 2 loaves French bread
  • salt and ground black pepper to taste

Preparation (instructions)

  1. To make the caramelized onions, heat oil in a saucepan under medium heat.
  2. Sweat onions for 15 minutes.
  3. Add vinegar, sugar, salt and pepper and cook until caramelized.
  4. Set aside caramelized onions.
  5. To make the beef sandwich, preheat oven to 425 degree F.
  6. Rub thyme, garlic and pepper on all surface of beef.
  7. Place beef on rack in a roasting pan.
  8. Roast in oven for 45 minutes.
  9. Transfer beef to carving board, cover with foil and allow to cool for 10 minutes.
  10. Carve into thick slices and set aside.

  12. To prepare sour cream sauce, soak sun dried tomatoes in boiling water for about 10 minutes.
  13. Drain and pat dry with kitchen paper towels.
  14. Chop tomatoes and add sour cream, salt and pepper in a bowl and set aside.
  15. Heat oil in a non stick skillet under medium heat.
  16. Add spinach and cook for 2 minutes.
  17. Season well with salt and pepper.
  18. Cut each bread loaf horizontally in half, then vertically into quarters.
  19. Position layer spinach, steak slices and caramelized onions on each bottom bread piece.
  20. Spread sour cream sauce on cut side of each top bread piece and close sandwiches.
  21. Serve immediately.
