For Balsamic Caramelized Onions
- 1 teaspoon vegetable oil
- 3 cups sliced onions
- 1/4 cup balsamic vinegar
- 1 teaspoon brown sugar
- salt and ground black pepper to taste
For Beef Sandwich
- 1 center cut beef tenderloin roast
- 2 minced cloves garlic
- 1 tablespoon chopped thyme
- 5 sundried tomatoes
- 1/4 cup low fat dairy sour cream
- 1 1/2 teaspoons olive oil
- 4 cups fresh baby spinach
- 2 loaves French bread
- salt and ground black pepper to taste
Preparation (instructions)
- To make the caramelized onions, heat oil in a saucepan under medium heat.
- Sweat onions for 15 minutes.
- Add vinegar, sugar, salt and pepper and cook until caramelized.
- Set aside caramelized onions.
- To make the beef sandwich, preheat oven to 425 degree F.
- Rub thyme, garlic and pepper on all surface of beef.
- Place beef on rack in a roasting pan.
- Roast in oven for 45 minutes.
- Transfer beef to carving board, cover with foil and allow to cool for 10 minutes.
- Carve into thick slices and set aside.
- To prepare sour cream sauce,
- To prepare sour cream sauce, soak sun dried tomatoes in boiling water for about 10 minutes.
- Drain and pat dry with kitchen paper towels.
- Chop tomatoes and add sour cream, salt and pepper in a bowl and set aside.
- Heat oil in a non stick skillet under medium heat.
- Add spinach and cook for 2 minutes.
- Season well with salt and pepper.
- Cut each bread loaf horizontally in half, then vertically into quarters.
- Position layer spinach, steak slices and caramelized onions on each bottom bread piece.
- Spread sour cream sauce on cut side of each top bread piece and close sandwiches.
- Serve immediately.
