Beef tenderloin steaks with blue cheese sauce recipe

Ingredients (nutrition)

  • 2 tablespoons cream cheese
  • 4 1/2 teaspoons crumbled blue cheese
  • 4 1/2 teaspoons plain nonfat yogurt
  • 2 teaspoons minced onion
  • 4 beef tenderloin steaks, cut into 1 inch thick
  • 1 clove garlic, cut into half
  • 2 teaspoons chopped parsley
  • salt and white pepper to taste

Preparation (instructions)

  1. To make blue cheese sauce, mix cream cheese, blue cheese, yogurt and onion in a bowl and set aside.
  2. Rub beef steaks with garlic.
  3. Position beef on rack in broiler pan.
  4. Broil for 16 minutes.
  5. 2 minutes before done, top with sauce, season well with salt, pepper and garnish with parsley.
  6. Serve hot.
