Beef & vegetable pizza recipe

Ingredients (nutrition)

  • 1 1/2 teaspoons olive oil
  • 2 1/2 cups sliced baby portobello mushrooms
  • 1/2 cup chopped onion
  • 12 oz Italian diced tomatoes
  • 1 1/2 cups asparagus pieces
  • 1/4 cup thinly sliced fresh basil
  • 15 oz cooked boneless beef pot roast, cut into 1/2 inch slices
  • 1/2 cup shredded mozzarella cheese
  • pre baked 12 inch diameter pizza crust

Preparation (instructions)

  1. Preheat oven to 450 degree F.
  2. Heat oil in a non stick skillet.
  3. Add mushrooms and onion.
  4. Cook until onion is tender.
  5. Add tomatoes and bring to a boil.
  6. Reduce heat and simmer for 8 minutes.
  7. Add asparagus and basil.
  8. Simmer for 4 minutes and remove from heat.
  9. Add beef and 1/4 cup cheese.
  10. Place pizza crust on a pizza pan.
  11. Scoop and spread evenly beef mixture on crust.
  12. Top with remaining cheese and bake for approximately 10 minutes.
  13. Serve hot.
