Ingredients (nutrition)
- 1 1/2 teaspoons olive oil
- 2 1/2 cups sliced baby portobello mushrooms
- 1/2 cup chopped onion
- 12 oz Italian diced tomatoes
- 1 1/2 cups asparagus pieces
- 1/4 cup thinly sliced fresh basil
- 15 oz cooked boneless beef pot roast, cut into 1/2 inch slices
- 1/2 cup shredded mozzarella cheese
- pre baked 12 inch diameter pizza crust
Preparation (instructions)
- Preheat oven to 450 degree F.
- Heat oil in a non stick skillet.
- Add mushrooms and onion.
- Cook until onion is tender.
- Add tomatoes and bring to a boil.
- Reduce heat and simmer for 8 minutes.
- Add asparagus and basil.
- Simmer for 4 minutes and remove from heat.
- Add beef and 1/4 cup cheese.
- Place pizza crust on a pizza pan.
- Scoop and spread evenly beef mixture on crust.
- Top with remaining cheese and bake for approximately 10 minutes.
- Serve hot.
