Ingredients (nutrition)
- 3/4 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 2 lb boneless lamb sirloin roast
- 2 tablespoons sunflower oil
- 1 diced red pepper
- 1 diced green pepper
- 1 chopped onion
- 1 lb sliced tomatoes
- 12 fl oz chicken stock
- 1/2 teaspoon chili powder
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon basil
- 8 oz long grain rice
Preparation (instructions)
- Preheat the oven to 350 degree F.
- Mix salt, cayenne pepper, ground black pepper, paprika and garlic powder in a bowl.
- Rub the spice mixture over lamb and set aside for 20 minutes.
- Heat oil in a frying pan and sear until browned.
- Transfer lamb to a roasting tin and roast in preheated oven for 40 minutes.
- Add red and green peppers and onion to the frying pan.
- Saute until soft and add tomatoes, stock, chili powder, lemon zest and basil.
- Bring to boil and add rice.
- Reduce heat and simmer until liquid evaporates and rice is cooked.
- Serve with lamb.
