Cajun lamb with rice recipe

Ingredients (nutrition)

  • 3/4 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 lb boneless lamb sirloin roast
  • 2 tablespoons sunflower oil
  • 1 diced red pepper
  • 1 diced green pepper
  • 1 chopped onion
  • 1 lb sliced tomatoes
  • 12 fl oz chicken stock
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon basil
  • 8 oz long grain rice

Preparation (instructions)

  1. Preheat the oven to 350 degree F.
  2. Mix salt, cayenne pepper, ground black pepper, paprika and garlic powder in a bowl.
  3. Rub the spice mixture over lamb and set aside for 20 minutes.
  4. Heat oil in a frying pan and sear until browned.
  5. Transfer lamb to a roasting tin and roast in preheated oven for 40 minutes.
  6. Add red and green peppers and onion to the frying pan.
  7. Saute until soft and add tomatoes, stock, chili powder, lemon zest and basil.
  8. Bring to boil and add rice.
  9. Reduce heat and simmer until liquid evaporates and rice is cooked.
  10. Serve with lamb.
