Chili beef wrap recipe

Ingredients (nutrition)

  • 3/4 cup non fat dairy sour cream
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated lime peel
  • 1/2 teaspoon lime juice
  • salt to taste
  • pinch of ground red pepper
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1 beef tri tip roast
  • 6 whole wheat flour tortillas
  • 3/4 cup black bean salsa
  • 3/4 cup chopped seeded tomatoes
  • 4 cups thinly sliced romaine lettuce

Preparation (instructions)

  1. Preheat oven to 425 degree F.
  2. To make the sauce, combine first six ingredients in a bowl.
  3. Cover with cling film and chill in refrigerator for at least 1 hour before use.
  4. Mix chili powder, garlic powder and ground cumin in a bowl and rub on all surface of beef roast.
  5. Place beef on a rack in a roasting pan and roast in oven for 40 minutes.
  6. Transfer beef to carving board, cover with foil and allow to cool for 10 minutes.
  7. Carve beef and spread evenly in tortilla with sauce and remaining ingredients.
  8. Serve immediately.
