Ingredients (nutrition)
- 3/4 cup non fat dairy sour cream
- 1 teaspoon minced garlic
- 1/2 teaspoon grated lime peel
- 1/2 teaspoon lime juice
- salt to taste
- pinch of ground red pepper
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1 beef tri tip roast
- 6 whole wheat flour tortillas
- 3/4 cup black bean salsa
- 3/4 cup chopped seeded tomatoes
- 4 cups thinly sliced romaine lettuce
Preparation (instructions)
- Preheat oven to 425 degree F.
- To make the sauce, combine first six ingredients in a bowl.
- Cover with cling film and chill in refrigerator for at least 1 hour before use.
- Mix chili powder, garlic powder and ground cumin in a bowl and rub on all surface of beef roast.
- Place beef on a rack in a roasting pan and roast in oven for 40 minutes.
- Transfer beef to carving board, cover with foil and allow to cool for 10 minutes.
- Carve beef and spread evenly in tortilla with sauce and remaining ingredients.
- Serve immediately.
