Coffee pork with port recipe

Ingredients (nutrition)

  • 4 lb pork loin
  • 8 fl oz espresso coffee
  • 4 fl oz single cream
  • 3 fl oz port
  • 1 1/2 teaspoons sugar
  • 2 fl oz water
  • 2 teaspoons cornflour

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Remove rind from pork and trim fat to make a 1/2 inch layer.
  3. Roll and tie meat with string.
  4. Put meat in a roasting tin and roast in oven for 30 minutes.
  5. In a bowl, mix well coffee, 2 fl oz cream, 1 1/2 fl oz port and sugar.
  6. Pour coffee mixture over pork.
  7. Continue to roast pork for 1 1/2 hours.
  8. Remove pork from oven and cover with foil in a warm place.
  9. To make the sauce, skim off fat from the pan juices and transfer the juices to a saucepan.
  10. Add water, cornflour and remaining cream and port in the saucepan.
  11. Cook until sauce thickens.
  12. Drizzle sauce over thinly sliced pork.
  13. Serve hot.
