Corned beef & cabbage recipe

Ingredients (nutrition)

  • 5 lb corned beef brisket
  • 2 tablespoons pickling spice
  • 1 orange, cut into wheels
  • 2 sliced celery stalks
  • 1 diced onion
  • 1/2 cup cold water
  • 5 1/2 tablespoons butter
  • 1 sliced large cabbage head
  • 1 1/2 cups quartered apples

Preparation (instructions)

  1. Preheat oven to 300 degree F.
  2. Line a roasting pan with aluminum foil, leaving extra extending over the sides to seal in the roast.
  3. Pat dry beef with kitchen paper towel.
  4. Rub beef with pickling spice and place in roasting pan.
  5. Arrange orange, celery and onion around the beef,
  6. Pour water and seal with aluminum foil.
  7. Bake in preheated oven for 4 1/4 hours.
  8. 40 minutes before the cooking time is up, heat 2 1/2 tablespoons butter and 1/4 cup water in a saucepan.
  9. Add cabbage and apples, cover and simmer under low heat for 35 minutes.
  10. Serve sliced corned beef with cabbage mixture and remaining butter.
