Ingredients (nutrition)
- 5 lb corned beef brisket
- 2 tablespoons pickling spice
- 1 orange, cut into wheels
- 2 sliced celery stalks
- 1 diced onion
- 1/2 cup cold water
- 5 1/2 tablespoons butter
- 1 sliced large cabbage head
- 1 1/2 cups quartered apples
Preparation (instructions)
- Preheat oven to 300 degree F.
- Line a roasting pan with aluminum foil, leaving extra extending over the sides to seal in the roast.
- Pat dry beef with kitchen paper towel.
- Rub beef with pickling spice and place in roasting pan.
- Arrange orange, celery and onion around the beef,
- Pour water and seal with aluminum foil.
- Bake in preheated oven for 4 1/4 hours.
- 40 minutes before the cooking time is up, heat 2 1/2 tablespoons butter and 1/4 cup water in a saucepan.
- Add cabbage and apples, cover and simmer under low heat for 35 minutes.
- Serve sliced corned beef with cabbage mixture and remaining butter.
