Cranberry pork chops recipe

Ingredients (nutrition)

  • 1 1/2 teaspoon onion powder
  • 4 pork chops
  • 2 tablespoons water
  • 10 fl oz cranberry sauce
  • 1 1/2 tablespoons soft brown sugar
  • 1 teaspoon ground ginger
  • 1 pinch ground nutmeg
  • 9 oz carrots, cut into strips
  • 1 teaspoon cornflour
  • 1 tablespoon chopped parsley

Preparation (instructions)

  1. Preheat the oven to 375 degree F.
  2. Sprinkle onion powder on both sides of pork chops and set aside.
  3. Heat water, cranberry sauce, brown sugar, ginger and nutmeg in a saucepan for approximately 2-3 minutes until sugar dissolves.
  4. Place carrots in a casserole dish.
  5. Top pork chops over carrots.
  6. Drizzle cranberry sauce uniformly over pork chops.
  7. Cover and bake in oven for about 40-45 minutes.
  8. Remove pork chops from oven and pour the sauce remaining from the casserole dish to a saucepan.
  9. Add cornflour and water in the saucepan if required to form a paste.
  10. Stir and cook for about 2-3 minutes until sauce thickens.
  11. Drizzle over pork chops and garnish with parsley.
  12. Serve hot.
