Ingredients (nutrition)
- 1/2 chopped onion
- 1 chopped garlic clove
- 1 oz butter
- 1/2 grated zest lemon
- 3 finely chopped sage leaves
- 6 oz cooked crumbled chestnuts
- 1 1/2 tablespoon freshly squeezed lemon juice
- 2 oz fresh white breadcrumbs
- 1 tablespoon chopped parsley
- 1 lightly beaten egg
- 1 prepared crown of lamb
- salt and ground black pepper to taste
Preparation (instructions)
- Preheat oven to 350 degree F.
- In a pan, sweat onion and garlic in butter until tender.
- Remove from heat and transfer to a bowl.
- Mix all remaining ingredients except lamb in the bowl.
- Fill mixture into the centre of the crown.
- Cover stuffing with foil.
- Roast crown for about 1 hour, remove foil at 40th minute.
- Allow to rest for 8 minutes before serving.
- Serve with roasted potatoes, carrots and asparagus.
