Crown roast lamb recipe

Ingredients (nutrition)

  • 1/2 chopped onion
  • 1 chopped garlic clove
  • 1 oz butter
  • 1/2 grated zest lemon
  • 3 finely chopped sage leaves
  • 6 oz cooked crumbled chestnuts
  • 1 1/2 tablespoon freshly squeezed lemon juice
  • 2 oz fresh white breadcrumbs
  • 1 tablespoon chopped parsley
  • 1 lightly beaten egg
  • 1 prepared crown of lamb
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. In a pan, sweat onion and garlic in butter until tender.
  3. Remove from heat and transfer to a bowl.
  4. Mix all remaining ingredients except lamb in the bowl.
  5. Fill mixture into the centre of the crown.
  6. Cover stuffing with foil.
  7. Roast crown for about 1 hour, remove foil at 40th minute.
  8. Allow to rest for 8 minutes before serving.
  9. Serve with roasted potatoes, carrots and asparagus.
