Curry beef with rice recipe

Ingredients (nutrition)

  • 2 tablespoons soy sauce
  • 2 teaspoons minced garlic
  • 1 lb boneless beef top sirloin steak, cut into strips
  • 14 oz coconut milk
  • 2 teaspoons Thai red curry paste
  • Basmati rice
  • 1 1/2 teaspoons sunflower oil
  • 7 oz trimmed green beans
  • 1 tablespoon minced lemon grass
  • 1/4 cup chopped basil
  • 1/4 teaspoon salt

Preparation (instructions)

  1. Mix soy sauce and garlic in a large bowl.
  2. Add beef and coat evenly. Set aside.
  3. In a separate bowl, whisk coconut milk and curry paste. Set aside.
  4. Cook Basmati rice according to package instruction.
  5. Heat oil in a non stick skillet under medium heat.
  6. Add beef and stir fry for 2 minutes.
  7. Remove beef and set aside in a warm place.
  8. Bring coconut mixture to boil in the same skillet.
  9. Reduce heat, simmer for 5 minutes.
  10. Add green beans, lemon grass, basil and salt. Bring to boil.
  11. Reduce heat and simmer for 13 minutes.
  12. Return beef to skillet and heat through.
  13. Serve hot with rice.
