Ingredients (nutrition)
- 2 tablespoons soy sauce
- 2 teaspoons minced garlic
- 1 lb boneless beef top sirloin steak, cut into strips
- 14 oz coconut milk
- 2 teaspoons Thai red curry paste
- Basmati rice
- 1 1/2 teaspoons sunflower oil
- 7 oz trimmed green beans
- 1 tablespoon minced lemon grass
- 1/4 cup chopped basil
- 1/4 teaspoon salt
Preparation (instructions)
- Mix soy sauce and garlic in a large bowl.
- Add beef and coat evenly. Set aside.
- In a separate bowl, whisk coconut milk and curry paste. Set aside.
- Cook Basmati rice according to package instruction.
- Heat oil in a non stick skillet under medium heat.
- Add beef and stir fry for 2 minutes.
- Remove beef and set aside in a warm place.
- Bring coconut mixture to boil in the same skillet.
- Reduce heat, simmer for 5 minutes.
- Add green beans, lemon grass, basil and salt. Bring to boil.
- Reduce heat and simmer for 13 minutes.
- Return beef to skillet and heat through.
- Serve hot with rice.
