Lamb with mint sauce recipe

Ingredients (nutrition)

For Mint Sauce

  • 2 teaspoons sugar
  • 2 tablespoons boiling water
  • 2 tablespoons white wine vinegar
  • 1 bunch of finely chopped mint leaves
  • salt and ground black pepper to taste

For Lamb

  • 8 lamb noisettes
  • salt and ground black pepper to taste
  • 2 tablespoons sunflower oil
  • 2 fl oz white wine

Preparation (instructions)

  1. To make mint sauce, dissolve sugar in boiling water and add vinegar and mint.
  2. Season sauce with salt and pepper and set aside for 40 minutes.
  3. Season lamb with salt and pepper.
  4. Add oil in a frying pan and saute lamb for about 6-8 minutes.
  5. Reserve pan juices, transfer lamb to a serving plate and cover with foil. Set aside in a warm place.
  6. Transfer pan juices to a saucepan and add in wine. Bring to boil for 2 minutes and pour over lamb.
  7. Transfer mint sauce to a sauceboat.
  8. Serve lamb hot with mint sauce and roasted vegetables.
