Ingredients (nutrition)
For Mint Sauce
- 2 teaspoons sugar
- 2 tablespoons boiling water
- 2 tablespoons white wine vinegar
- 1 bunch of finely chopped mint leaves
- salt and ground black pepper to taste
For Lamb
- 8 lamb noisettes
- salt and ground black pepper to taste
- 2 tablespoons sunflower oil
- 2 fl oz white wine
Preparation (instructions)
- To make mint sauce, dissolve sugar in boiling water and add vinegar and mint.
- Season sauce with salt and pepper and set aside for 40 minutes.
- Season lamb with salt and pepper.
- Add oil in a frying pan and saute lamb for about 6-8 minutes.
- Reserve pan juices, transfer lamb to a serving plate and cover with foil. Set aside in a warm place.
- Transfer pan juices to a saucepan and add in wine. Bring to boil for 2 minutes and pour over lamb.
- Transfer mint sauce to a sauceboat.
- Serve lamb hot with mint sauce and roasted vegetables.
