Meat & mushroom pie recipe

Ingredients (nutrition)

  • 2 1/2 tablespoons sunflower oil
  • 1 chopped onion
  • 4 oz chopped bacon
  • 1 lb 2oz diced chuck steak
  • 2 1/2 tablespoons flour
  • 4 oz lamb's kidneys
  • 1 bunch garni
  • 14 fl oz beef stock
  • 3 1/2 oz button mushrooms
  • salt and ground black pepper to taste
  • 8 oz ready made puff pastry
  • beaten egg for glazing

Preparation (instructions)

  1. Preheat oven to 325 degree F.
  2. Saute onion and bacon with oil in a saucepan until lightly browned.
  3. Coat chuck steak in flour and add to pan.
  4. Continue saute until browned.
  5. Coat lamb's kidney in flour and add to pan with garni.
  6. Saute until browned.
  7. Transfer mixture to a casserole dish.
  8. Pour in stock, cover and cook in oven for 2 hours.
  9. Remove from the oven and stir in the mushrooms.
  10. Season well with salt and pepper. Leave to cool.
  11. Preheat oven to 425 degree F.
  12. Roll out pastry to 1 inch larger than the top of a pie dish.
  13. Cut off a strip and fit around the dampened rim of the dish to make a collar.
  14. Brush pastry with water.
  15. Tip the meat mixture into the dish.
  16. Lay the pastry round over the dish and compress the edges together to seal.
  17. Make a small slit in the pastry and brush with the beaten egg.
  18. Bake in oven for about 15-20 minutes.
  19. Reduce oven temperature to 350 degree F and bake for another 15-20 minutes.
  20. Serve immediately.
