Ingredients (nutrition)
- 2 1/2 tablespoons sunflower oil
- 1 chopped onion
- 4 oz chopped bacon
- 1 lb 2oz diced chuck steak
- 2 1/2 tablespoons flour
- 4 oz lamb's kidneys
- 1 bunch garni
- 14 fl oz beef stock
- 3 1/2 oz button mushrooms
- salt and ground black pepper to taste
- 8 oz ready made puff pastry
- beaten egg for glazing
Preparation (instructions)
- Preheat oven to 325 degree F.
- Saute onion and bacon with oil in a saucepan until lightly browned.
- Coat chuck steak in flour and add to pan.
- Continue saute until browned.
- Coat lamb's kidney in flour and add to pan with garni.
- Saute until browned.
- Transfer mixture to a casserole dish.
- Pour in stock, cover and cook in oven for 2 hours.
- Remove from the oven and stir in the mushrooms.
- Season well with salt and pepper. Leave to cool.
- Preheat oven to 425 degree F.
- Roll out pastry to 1 inch larger than the top of a pie dish.
- Cut off a strip and fit around the dampened rim of the dish to make a collar.
- Brush pastry with water.
- Tip the meat mixture into the dish.
- Lay the pastry round over the dish and compress the edges together to seal.
- Make a small slit in the pastry and brush with the beaten egg.
- Bake in oven for about 15-20 minutes.
- Reduce oven temperature to 350 degree F and bake for another 15-20 minutes.
- Serve immediately.
