Mushroom veal chops recipe

Ingredients (nutrition)

  • 1 oz butter
  • 4 lean loin veal chops
  • 1 chopped onion
  • 8 oz white onions
  • 1 lb mushroom caps
  • 2 teaspoons tomato puree
  • 1 tablespoon flour
  • 6 fl oz chicken stock
  • 5 fl oz dry white wine
  • 2 oz chopped fresh chives
  • 1 bay leaf
  • 1 teaspoon chopped basil
  • 1 teaspoon chopped tarragon
  • 1 tablespoon chopped parsley

Preparation (instructions)

  1. Preheat oven to 325 degree F.
  2. Melt butter in a frying pan. Add the veal chops and brown over a high heat.
  3. Transfer to a casserole dish.
  4. Sweat onions in the same frying pan.
  5. Add remaining ingredients except the parsley.
  6. Cover and cook for 4 minutes.
  7. Spread mixture over the chops.
  8. Cover casserole dish and bake in oven for 1 hour.
  9. Garnish with parsley.
  10. Serve hot.
