Ingredients (nutrition)
- 1 oz butter
- 4 lean loin veal chops
- 1 chopped onion
- 8 oz white onions
- 1 lb mushroom caps
- 2 teaspoons tomato puree
- 1 tablespoon flour
- 6 fl oz chicken stock
- 5 fl oz dry white wine
- 2 oz chopped fresh chives
- 1 bay leaf
- 1 teaspoon chopped basil
- 1 teaspoon chopped tarragon
- 1 tablespoon chopped parsley
Preparation (instructions)
- Preheat oven to 325 degree F.
- Melt butter in a frying pan. Add the veal chops and brown over a high heat.
- Transfer to a casserole dish.
- Sweat onions in the same frying pan.
- Add remaining ingredients except the parsley.
- Cover and cook for 4 minutes.
- Spread mixture over the chops.
- Cover casserole dish and bake in oven for 1 hour.
- Garnish with parsley.
- Serve hot.
