Ingredients (nutrition)
- 1 tablespoon sunflower oil
- 2 crushed garlic cloves
- 1 chopped onion
- 12 oz lean pork fillet, cut into 1/2 inch thick slices
- 1 oz flour
- 1 1/2 tablespoons tomato puree
- 14 fl oz chicken stock
- 4 oz sliced button mushrooms
- 1 diced green pepper
- 1 teaspoon ground nutmeg
- salt and ground black pepper to taste
- 4 tablespoons low fat Greek style yogurt
Preparation (instructions)
- Heat up oil in a saucepan and saute garlic, onion and pork for about 5 minutes until lightly browned.
- Add flour, tomato puree and stock.
- Stir thoroughly and add in mushrooms, green pepper and nutmeg.
- Season well with salt and pepper.
- Cover and simmer for about 25 minutes until pork is soft and tender.
- Remove from heat and add in yogurt.
- Stir well and serve with rice.
