Pork stroganoff recipe

Ingredients (nutrition)

  • 1 tablespoon sunflower oil
  • 2 crushed garlic cloves
  • 1 chopped onion
  • 12 oz lean pork fillet, cut into 1/2 inch thick slices
  • 1 oz flour
  • 1 1/2 tablespoons tomato puree
  • 14 fl oz chicken stock
  • 4 oz sliced button mushrooms
  • 1 diced green pepper
  • 1 teaspoon ground nutmeg
  • salt and ground black pepper to taste
  • 4 tablespoons low fat Greek style yogurt

Preparation (instructions)

  1. Heat up oil in a saucepan and saute garlic, onion and pork for about 5 minutes until lightly browned.
  2. Add flour, tomato puree and stock.
  3. Stir thoroughly and add in mushrooms, green pepper and nutmeg.
  4. Season well with salt and pepper.
  5. Cover and simmer for about 25 minutes until pork is soft and tender.
  6. Remove from heat and add in yogurt.
  7. Stir well and serve with rice.
