Ingredients (nutrition)
- 2 pork fillets
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 2 tablespoons vegetable oil
- 3 1/2 tablespoons honey
- 2 tablespoons water
- 3 peaches, cut into halves
- salt to taste
Preparation (instructions)
- Preheat the oven to 425 degree F.
- Place pork in a greased roasting tin and set aside.
- Combine pepper, coriander and cinnamon in a small bowl.
- Sprinkle the spices on top of the pork.
- Drizzle vegetable oil over it.
- Bake the pork in oven for about 20 minutes.
- While waiting for the pork in the oven, add honey and water in a saucepan.
- Stir regularly under very low heat until honey dissolves.
- After 20 minutes, place peach halves around the pork and pour honey mixture all over the pork and peaches.
- Season with salt and bake for another 20 minutes.
- Remove from oven and leave to rest for at least 3-5 minutes before serving.
