Roast pork fillet with peaches recipe

Ingredients (nutrition)

  • 2 pork fillets
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons vegetable oil
  • 3 1/2 tablespoons honey
  • 2 tablespoons water
  • 3 peaches, cut into halves
  • salt to taste

Preparation (instructions)

  1. Preheat the oven to 425 degree F.
  2. Place pork in a greased roasting tin and set aside.
  3. Combine pepper, coriander and cinnamon in a small bowl.
  4. Sprinkle the spices on top of the pork.
  5. Drizzle vegetable oil over it.
  6. Bake the pork in oven for about 20 minutes.
  7. While waiting for the pork in the oven, add honey and water in a saucepan.
  8. Stir regularly under very low heat until honey dissolves.
  9. After 20 minutes, place peach halves around the pork and pour honey mixture all over the pork and peaches.
  10. Season with salt and bake for another 20 minutes.
  11. Remove from oven and leave to rest for at least 3-5 minutes before serving.
