Ingredients (nutrition)
- 8 pepperoni sausages
- 1 1/2 tablespoon vegetable oil
- 2 chopped garlic cloves
- 1 chopped onion
- 1 green pepper, cut into strips
- 13 oz chopped plum tomatoes
- 2 tablespoons sun dried tomato paste
- 14 oz cooked cannellini beans
Preparation (instructions)
- Prick sausages all over with a fork.
- Cook under a preheated grill for 12 minutes until brown evenly all the sides.
- Set aside in a warm place.
- Heat oil in a frying pan.
- Add garlic, onion and green pepper.
- Cook for 5 minutes until softened.
- Add tomatoes and allow to simmer for another 5 minutes.
- Add sun dried tomato paste, cannellini beans and the cooked sausages into the frying pan.
- Cook for 5 minutes.
- Serve hot with rice, mashed potatoes or roasted vegetables.
