Sausage & bean casserole recipe

Ingredients (nutrition)

  • 8 pepperoni sausages
  • 1 1/2 tablespoon vegetable oil
  • 2 chopped garlic cloves
  • 1 chopped onion
  • 1 green pepper, cut into strips
  • 13 oz chopped plum tomatoes
  • 2 tablespoons sun dried tomato paste
  • 14 oz cooked cannellini beans

Preparation (instructions)

  1. Prick sausages all over with a fork.
  2. Cook under a preheated grill for 12 minutes until brown evenly all the sides.
  3. Set aside in a warm place.
  4. Heat oil in a frying pan.
  5. Add garlic, onion and green pepper.
  6. Cook for 5 minutes until softened.
  7. Add tomatoes and allow to simmer for another 5 minutes.
  8. Add sun dried tomato paste, cannellini beans and the cooked sausages into the frying pan.
  9. Cook for 5 minutes.
  10. Serve hot with rice, mashed potatoes or roasted vegetables.
