Ingredients (nutrition)
For Thai Sauce
- 2 fl oz freshly squeezed lime juice
- 2 1/4 tablespoons Thai fish sauce
- 2 1/4 tablespoons sweet chili sauce
For Lamb
- 2 1/2 tablespoons vegetable oil
- 1 3/4 lb thinly sliced lamb loin fillets
- 1 red onion, cut into wedges
- 2 finely chopped garlic cloves
- 1 finely chopped fresh red chili
- 1/2 oz chopped mint
Preparation (instructions)
- To make the sauce, mix together sauce ingredients in a bowl and set aside.
- Heat a wok and add 1 tablespoon oil over a high heat.
- Add lamb and stir fry for about 2 1/2 minutes until browned.
- Remove from wok and set aside.
- Heat remaining oil in the wok.
- Add onion and garlic.
- Stir fry for a minute and add chili.
- Stir fry for a further 1/2 minute.
- Return lamb to wok and pour in sauce.
- Cook for 2 1/2 minutes over high heat.
- Add mint and serve hot.
