Ingredients (nutrition)
For Pork
- 14 oz lean pork fillet
- salt and ground black pepper to taste
- 3 1/2 tablespoons orange marmalade
- 1 tablespoon white wine vinegar
- grated zest and juice of 1 orange
- dash of Tabasco sauce
For Sauce
- 1 tablespoon olive oil
- 1 chopped onion
- 1 thinly sliced green pepper
- 1 tablespoon cornflour
- 5 fl oz orange juice
Preparation (instructions)
- Preheat a charcoal barbecue grill until hot.
- Lay a large piece of foil in a shallow dish.
- Put the pork fillet in the centre of the foil and season well with salt and pepper.
- In a saucepan, add marmalade, vinegar, orange zest and juice and Tabasco sauce.
- Stir until marmalade melts and all the ingredients blend well.
- Pour mixture over pork.
- Wrap pork in foil with complete seal.
- Place parcel over hot barbecue coals.
- Barbecue for approximately 30 minutes, turning the parcel occasionally.
- To make the sauce, heat up olive oil in a saucepan.
- Sweat onion for 3 minutes until soft.
- Add green pepper and saute for 4 minutes.
- Remove pork from the foil and place on barbecue rack.
- Pour pork juices into the onion and pepper saucepan.
- Continue to barbecue pork for another 20 minutes until cooked through.
- Combine cornflour and orange juice in a bowl and pour into the saucepan.
- Continue to stir until sauce thickens.
- Cut pork into slices and drizzle sauce over.
- Serve with mashed potatoes and salad.
