Tangy pork recipe

Ingredients (nutrition)

For Pork

  • 14 oz lean pork fillet
  • salt and ground black pepper to taste
  • 3 1/2 tablespoons orange marmalade
  • 1 tablespoon white wine vinegar
  • grated zest and juice of 1 orange
  • dash of Tabasco sauce

For Sauce

  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 thinly sliced green pepper
  • 1 tablespoon cornflour
  • 5 fl oz orange juice

Preparation (instructions)

  1. Preheat a charcoal barbecue grill until hot.
  2. Lay a large piece of foil in a shallow dish.
  3. Put the pork fillet in the centre of the foil and season well with salt and pepper.
  4. In a saucepan, add marmalade, vinegar, orange zest and juice and Tabasco sauce.
  5. Stir until marmalade melts and all the ingredients blend well.
  6. Pour mixture over pork.
  7. Wrap pork in foil with complete seal.
  8. Place parcel over hot barbecue coals.
  9. Barbecue for approximately 30 minutes, turning the parcel occasionally.
  10. To make the sauce, heat up olive oil in a saucepan.
  11. Sweat onion for 3 minutes until soft.
  12. Add green pepper and saute for 4 minutes.
  13. Remove pork from the foil and place on barbecue rack.
  14. Pour pork juices into the onion and pepper saucepan.
  15. Continue to barbecue pork for another 20 minutes until cooked through.
  16. Combine cornflour and orange juice in a bowl and pour into the saucepan.
  17. Continue to stir until sauce thickens.
  18. Cut pork into slices and drizzle sauce over.
  19. Serve with mashed potatoes and salad.
