Ingredients (nutrition)
- 1 lb minced lamb
- 2 crushed garlic cloves
- 1 sliced red onion
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- grated zest and juice of 1 orange
- 2 tablespoons light soy sauce
- 1 orange, cut into wedges
- salt and ground black pepper to taste
Preparation (instructions)
- Heat wok and add lamb.
- Stir fry for 5 minutes.
- Add garlic, onion, cumin seeds and coriander.
- Stir fry for another 5 minutes.
- Add orange zest and juice and soy sauce.
- Reduce heat, cover and leave to simmer for 15-20 minutes.
- Add orange wedges and give a quick stir.
- Season well with salt and pepper and heat for another 2 minutes.
- Serve hot with aromatic rice.
