Ingredients (nutrition)
- 2 cups diced peeled beets
- 1 1/2 cups orange juice
- 2 1/4 tablespoons honey
- 1/4 teaspoon ground red pepper
- 2 1/2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/4 teaspoon salt
- 2 minced cloves garlic
- 2 teaspoons cumin seeds
- 4 beef tenderloin steaks, cut into 1 inch thick
- 15 oz Mandarin orange segments
- 6 1/2 cups arugula
Preparation (instructions)
- Add beets, orange juice, honey and pepper in a saucepan.
- Bring to boil, reduce heat and simmer for 45 minutes.
- Drain beets and set aside.
- Reserve pan juices in the saucepan and add olive oil, vinegar, and salt.
- Heat up under medium heat for 1 minute and set aside.
- Press garlic and cumin seeds onto beef steaks.
- Place steaks on grill.
- Grill for 15 minutes, uncovered.
- Season with salt if desired.
- Add reserved beets, orange segments and arugula in bowl and drizzle with dressing.
- Serve steaks with salad.
