Tenderloin steaks with arugula salad recipe

Ingredients (nutrition)

  • 2 cups diced peeled beets
  • 1 1/2 cups orange juice
  • 2 1/4 tablespoons honey
  • 1/4 teaspoon ground red pepper
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 2 minced cloves garlic
  • 2 teaspoons cumin seeds
  • 4 beef tenderloin steaks, cut into 1 inch thick
  • 15 oz Mandarin orange segments
  • 6 1/2 cups arugula

Preparation (instructions)

  1. Add beets, orange juice, honey and pepper in a saucepan.
  2. Bring to boil, reduce heat and simmer for 45 minutes.
  3. Drain beets and set aside.
  4. Reserve pan juices in the saucepan and add olive oil, vinegar, and salt.
  5. Heat up under medium heat for 1 minute and set aside.
  6. Press garlic and cumin seeds onto beef steaks.
  7. Place steaks on grill.
  8. Grill for 15 minutes, uncovered.
  9. Season with salt if desired.
  10. Add reserved beets, orange segments and arugula in bowl and drizzle with dressing.
  11. Serve steaks with salad.
