This soup is one of my grandmother’s all time favorite, especially during the winter season. You can use ham instead of bacon, depends on your own preference. The cool-weather diner soup taste better with garlic, buttermilk biscuits or Parmesan toast!

This dish is based on the artichokes root, one of a plant from sunflower family. The artichokes is available starting in late summer. Some people use the artichokes hearts as replacement, which generally available in spring. The plant taste like refreshing flavors of water chestnuts. Cook the artichokes with skin, serve together with croutons, garlic and sage will add extra crunch and flavor to the soup.
