Ingredients (nutrition)
- 2 lb chicken, cut into half lengthways
- 3 1/2 oz melted butter
- 6 oz chopped dessert apples
- 2 oz chopped celery sticks
- 1/2 chopped onion
- 7 oz croutons
- 3 fl oz water
- salt and ground black pepper to taste
Preparation (instructions)
- Preheat grill.
- Break chicken wing, hip and drumstick joints to lay the chicken flat while cooking.
- Place chicken skin side up in a baking tray, brush with 1/2 oz butter and season well with salt and pepper.
- Grill for 25 minutes.
- Turn chicken and brush cavity side with 1/2 oz butter and season again with salt and pepper.
- Grill for another 25 minutes.
- Add remaining butter in a saucepan and stir in apples, celery and onin.
- Cook until apples caramelized and add croutons, water, salt and pepper.
- Place apple mixture in the chicken cavity and grill for 5 minutes.
- Serve immediately.
