Ingredients (nutrition)
- 2 tablespoons flour
- 1/4 teaspoon ground black pepper
- 4 skinless chicken breast fillets, cut half lengthways each
- 3 tablespoons olive oil
- 6 peeled garlic cloves
- 13 oz small mushrooms
- 6 fl oz chicken stock
- 4 tablespoons balsamic vinegar
Preparation (instructions)
- To prepare chicken seasoning, mix flour and pepper.
- Dredge chicken in seasoning mixture.
- Heat oil in a large frying pan under medium heat.
- Cook chicken until nicely browned on one side.
- Add garlic, turn chicken and continue to cook until golden brown for both sides.
- Add mushrooms and cook for 6 minutes.
- Add stock and vinegar.
- Cover, reduce heat to low and cook for 12 minutes.
- Transfer chicken to serving plate and set aside in a warm place.
- Continue to cook the sauce until thickens.
- Spoon sauce over chicken and serve hot.
