Balsamic vinegar chicken recipe

Ingredients (nutrition)

  • 2 tablespoons flour
  • 1/4 teaspoon ground black pepper
  • 4 skinless chicken breast fillets, cut half lengthways each
  • 3 tablespoons olive oil
  • 6 peeled garlic cloves
  • 13 oz small mushrooms
  • 6 fl oz chicken stock
  • 4 tablespoons balsamic vinegar

Preparation (instructions)

  1. To prepare chicken seasoning, mix flour and pepper.
  2. Dredge chicken in seasoning mixture.
  3. Heat oil in a large frying pan under medium heat.
  4. Cook chicken until nicely browned on one side.
  5. Add garlic, turn chicken and continue to cook until golden brown for both sides.
  6. Add mushrooms and cook for 6 minutes.
  7. Add stock and vinegar.
  8. Cover, reduce heat to low and cook for 12 minutes.
  9. Transfer chicken to serving plate and set aside in a warm place.
  10. Continue to cook the sauce until thickens.
  11. Spoon sauce over chicken and serve hot.
