Chicken cordon bleu recipe

Ingredients (nutrition)

  • 1 1/2 teaspoon butter
  • 4 small skinless and boneless chicken breast, remove fats and cut into halves
  • 1/2 cup chicken broth
  • 2 tablespoons balsamic vinegar
  • ground black pepper to taste
  • 4 thin slices cooked ham
  • 4 thin slices low fat mozzarella cheese

Preparation (instructions)

  1. Melt butter under medium heat in a skillet.
  2. Add chicken and saute for 6 minutes.
  3. Reduce heat and cook for another 4 minutes.
  4. Increase heat and pour in chicken broth, vinegar and pepper.
  5. Cook for 1 minute.
  6. Remove from heat and top chicken with ham and cheese.
  7. Cover skillet to melt the cheese.
  8. Serve hot with roasted potatoes and vegetables.
