Chicken with beansprouts recipe

Ingredients (nutrition)

  • 4 oz sliced chicken breast fillet
  • 1 teaspoon salt
  • 1/2 lightly beaten egg white
  • 1 teaspoon cornflour mixed with 1 1/2 teaspoons water
  • 10 fl oz vegetable oil
  • 1 thinly sliced onion
  • 1 thinly sliced carrot
  • 1 thinly sliced green pepper
  • 4 oz beansprouts
  • 1/2 teaspoon sugar
  • 1 tablespoon light soy sauce
  • 1 teaspoon rice wine
  • 4 tablespoons water
  • 1/2 teaspoon sesame oil

Preparation (instructions)

  1. In a mixing bowl, mix well chicken slices, salt, egg white and cornflour mixture.
  2. Heat oil in a wok and stir fry chicken for approximately 1 minute.
  3. Remove chicken from heat and drain on kitchen paper towel. Set aside.
  4. Pour off oil and remain 2 1/2 tablespoons in the wok.
  5. Sweat onion, carrot and pepper for 2 minutes.
  6. Add bean sprouts and give a quick stir fry.
  7. Return chicken to the wok, add sugar, soy sauce, rice wine and water.
  8. Add sesame oil and serve hot.
  9. To make chicken rice, serve the chicken dish with rice.
