Ingredients (nutrition)
- 4 oz sliced chicken breast fillet
- 1 teaspoon salt
- 1/2 lightly beaten egg white
- 1 teaspoon cornflour mixed with 1 1/2 teaspoons water
- 10 fl oz vegetable oil
- 1 thinly sliced onion
- 1 thinly sliced carrot
- 1 thinly sliced green pepper
- 4 oz beansprouts
- 1/2 teaspoon sugar
- 1 tablespoon light soy sauce
- 1 teaspoon rice wine
- 4 tablespoons water
- 1/2 teaspoon sesame oil
Preparation (instructions)
- In a mixing bowl, mix well chicken slices, salt, egg white and cornflour mixture.
- Heat oil in a wok and stir fry chicken for approximately 1 minute.
- Remove chicken from heat and drain on kitchen paper towel. Set aside.
- Pour off oil and remain 2 1/2 tablespoons in the wok.
- Sweat onion, carrot and pepper for 2 minutes.
- Add bean sprouts and give a quick stir fry.
- Return chicken to the wok, add sugar, soy sauce, rice wine and water.
- Add sesame oil and serve hot.
- To make chicken rice, serve the chicken dish with rice.
