Ingredients (nutrition)
- 1 chopped onion
- 1 chopped large apple tart
- 1/4 cup chicken broth
- 6 cups breadcrumbs
- 1/2 cup toasted almonds
- 1/2 cup currants
- 1/4 cup minced parsley
- 1 teaspoon dried sage leaves
- salt and ground black pepper to taste
- 7 lb goose with giblets removed
Preparation (instructions)
- Add onion, apple and chicken broth in a saucepan.
- Bring to boil, reduce heat and simmer for 6 minutes. Set aside.
- In a large glass bowl, mix well onion mixture, bread crumbs, almonds, currants, parsley, sage, salt and pepper. Set aside.
- Preheat oven to 350 degree F.
- Prick goose, stuff and truss goose.
- Place goose, with breast side up in a large roasting pan.
- Spoon leftover stuffing in a greased casserole, cover with cling film and chill.
- Roast goose for 2 1/2 hours.
- Bake stuffing chilled in casserole previously with the goose for the last 30 minutes of cooking time.
- Allow goose to rest for 15 minutes before carving.
- Serve hot with mashed potatoes and roasted vegetables.
