Currant stuffed goose recipe

Ingredients (nutrition)

  • 1 chopped onion
  • 1 chopped large apple tart
  • 1/4 cup chicken broth
  • 6 cups breadcrumbs
  • 1/2 cup toasted almonds
  • 1/2 cup currants
  • 1/4 cup minced parsley
  • 1 teaspoon dried sage leaves
  • salt and ground black pepper to taste
  • 7 lb goose with giblets removed

Preparation (instructions)

  1. Add onion, apple and chicken broth in a saucepan.
  2. Bring to boil, reduce heat and simmer for 6 minutes. Set aside.
  3. In a large glass bowl, mix well onion mixture, bread crumbs, almonds, currants, parsley, sage, salt and pepper. Set aside.
  4. Preheat oven to 350 degree F.
  5. Prick goose, stuff and truss goose.
  6. Place goose, with breast side up in a large roasting pan.
  7. Spoon leftover stuffing in a greased casserole, cover with cling film and chill.
  8. Roast goose for 2 1/2 hours.
  9. Bake stuffing chilled in casserole previously with the goose for the last 30 minutes of cooking time.
  10. Allow goose to rest for 15 minutes before carving.
  11. Serve hot with mashed potatoes and roasted vegetables.
