Ingredients (nutrition)
- 1 duck
- salt and ground black pepper to taste
- 13 oz cherry tomatoes
- 5 oz pitted black olives
- 10 fl oz red wine
Preparation (instructions)
- Preheat oven to 425 degree F.
- Prick duck and season with salt and pepper outside and inside the duck.
- Place duck on a rack in a roasting tin, breast side up and roast for 23 minutes.
- Turn duck over and roast for another 30 minutes.
- Reduce oven temperature 400 degree F.
- Pour out fat and roast for 15 minutes with breast side up.
- Add tomatoes, olives and wine.
- Roast for another 15 minutes.
- Remove from oven and allow to cool for 8 minutes.
- Carve duck and serve with tomatoes and olives.
