Duck with tomatoes recipe

Ingredients (nutrition)

  • 1 duck
  • salt and ground black pepper to taste
  • 13 oz cherry tomatoes
  • 5 oz pitted black olives
  • 10 fl oz red wine

Preparation (instructions)

  1. Preheat oven to 425 degree F.
  2. Prick duck and season with salt and pepper outside and inside the duck.
  3. Place duck on a rack in a roasting tin, breast side up and roast for 23 minutes.
  4. Turn duck over and roast for another 30 minutes.
  5. Reduce oven temperature 400 degree F.
  6. Pour out fat and roast for 15 minutes with breast side up.
  7. Add tomatoes, olives and wine.
  8. Roast for another 15 minutes.
  9. Remove from oven and allow to cool for 8 minutes.
  10. Carve duck and serve with tomatoes and olives.
